Preheat the oven to 365 degrees.
Melt your butter on low in a small saucepan. Let cool.
Whisk your dry ingredients together: flour, baking powder, baking soda & salt. Set aside In a stand mixer, pour the melted butter in with your brown sugar and granulated sugar. Whisk.
Add in the eggs while the mixture is being stirred, one at a time.
Add in vanilla bean paste or extract.
Slowly combine your dry ingredients with your sugar mixture.
Once combined, fold in chocolate chips with a spatula.
Cover dough & let sit for 20 minutes.
Using an ice cream scooper, make dough balls into a palm-sized portion. Evenly spread cooking spray on a sheet. Place the dough balls in equally-spaced locations on the sheet.
Bake each sheet for 10-11 minutes, or until the edges are brown. REMINDER: Your cookies will continue to bake on the cookie sheet outside the oven.
Let cook on a cookie rack for 10 minutes.
