Banana Bread with Cream Cheese Filling

Ingredients
  

For Bread

  • 2 Smashed Bananas
  • ¼ Cup Sour Cream Substitute: Plain or Vanilla Greek Yogurt
  • 1 Egg
  • 1 Cup Dark Brown Sugar
  • ¼ Cup Vegetable Oil Substitute: Olive or Coconut Oil
  • 1 Tbsp Vanilla Bean Paste Substitute: Vanilla Extract
  • 1 cup All-Purpose Flour
  • ½ tsp Baking Powder
  • ½ tsp Baking Soda
  • ¼ tsp Salt

For Cream-Cheese Filling

  • 1 Egg
  • ½ Cup Granulated/White Sugar
  • 4 oz Cream Cheese (Half of a Cream Cheese Brick)
  • 3 tbsp All-Purpose Flour

Instructions
 

  • Preheat the oven to 350℉
  • Prepare a loaf pan by spraying it with cooking spray.
  • Mix the bread's wet ingredients (Bananas, Sour Cream, Egg, Dark Brown Sugar, Vegetable Oil, Vanilla Bean Paste).
  • Add dry ingredients (Flour, Baking Powder, Baking Soda, Salt) until combined.
  • In a separate bowl, combine the cream cheese filling ingredients (Egg, Sugar, Cream Cheese, Flour).
  • Fill the bread pan with a little over half of the bread batter & set aside.
  • Using a spoon or a spatula, place the cream cheese mixture over the bread batter in the bread pan in dollops. Spread evenly, being sure not to push the filling down.
  • Add the rest of the bread filling on top of the cream cheese mixture to the bread pan.
  • Place the bread pan on the center rack of your preheated oven & bake for 45 minutes. If the bread still needs more time to cook, check on it 5 minute increments.
